    Chocolate chips
    Does any one know of a way to keep chocolate chip candy from melting? Need to take it to a pot luck. There is no frig.

    Yes I thought of that. But is there something, I can mix in them to keep them harder? Want to leave them out displayed. I put them in the freezer here. After I take them out for company, they start to melt. Kind of like a box of chocolates.They don't melt.

    Most chocolates will do fine at room temp between 65-70 degrees. Is it hotter than that where you live? Also, if you put them in the freezer they will sweat when you bring them out and will take away the attractiveness of all the time you've put into them. I have made gourmet chocolates (truffles, etc.) for the past twelve years and had my own chocolate shop downtown, so if you have any questions on chocolate I will be happy to help. If you want any good recipes I would be happy to share with you! :D Good luck w/your candies!

    Yes, Truffles you bet. I love to make all kinds of candies. Got something quick I can take to bingos? That's always a stomper for me.

    Every time some one wins over there, they have bring something small the following week.

    I wonder if this sight has been receiving all my tips I' ve been sending nightly?

    Truffle Recipe
    1 cup of whipping cream or heavy whipping cream
    1 pound of semi-sweet chocolate chips

    In a double boiler, melt the chocolate chips and cream together until smooth. The with a good mixer (not a hand mixer) mix on high for about 5 to 10 minutes. Do you use candy tray molds that you line with chocolate? If so, fill a pastery bag with the mixture and then fill each mold a bit more than 3/4 full. Seal the top with melted chocolate and then put the try in the freezer for a few minutes to about 5 minutes... or long enough so that the truffles will pop out of the tray. And voilą! You have truffles. Happy chocolatiering! If you have any questions, please feel free to ask :)
