I purchased a home on a contract for deed. It had a balloon payment due in December. I was unable to obtain financing to pay off the balloon payment. The sellers are willing to extend the contract for another 18 to 24 months so we can try to get refinanced. The contract is recorded at the court house.
How do we go about changing the balloon payment on the original contract.

Either write up a new contract, or an amendment with the new terms.
You can file the amendment at the courthouse if you would like for your security.
