I believe that you cannot do this.
I know others have had the opposite experience and believe you can!

If you are the one paying, see if the bank will allow you refinance with your mother, this will solve all the problems.
Most lenders will not add another name to the deed
In Arizona, adding a name to the deed is just a matter of the person on the deed to file a quit claim on him/herself, then deeding the property to him/herself and the spouse. Very easy and the lender has no say so.. at all!
This is a question from 2008 and long dead. I don't know whether the OP is actually in Arizona.
Before I would attempt to do this I'd check my mortgage papers to make sure this is allowed.
