I have three wires one red, one black and one white and I want to install a fixture in the ceiling. How do I do this?

If there was a switch controlling it before, use same 2 wires. Other wise you need to hook up white and red, or white and black. Cap the unused.
If no switch, you need to run from light to new switch location.
