    Holiday Baking
    Hello,

    On christmas eve some friends of mine are coming over for a kind of all day bake-a-thon to bake holiday sweets for our families. Between us we have a few favorite recipes, and cook books, but I was just wondering if any of you had some great recipes that you would like to share. We kind of want something new to bake, and need some suggestions.

    I make a quick strawberry bread (you can also use raspberries)

    3 – cups flour
    2 – cups sugar
    1 – tsp baking soda
    ½ - tsp salt
    1 – tsp cinnamon
    4 – eggs
    1 ¼ - cups vegetable oil
    2 – 10oz packages frozen strawberries, thawed and drained
    1 – cup chopped pecans

    TOPPING:
    ½ - cup light brown sugar
    1/3 – cup flour
    4 – tsp butter, in 8 pieces

    Directions:

    Preheat over to 375, grease two loaf pans. Stir together flour, sugar, baking soda, salt and cinnamon in large bowl. Make a well in center of mixture.

    Combine eggs, oil, strawberries and pecans in small bowl. Add to dry ingredients, stir well. Divide batter between pans.

    For topping – combine flour and brown sugar in small bowl. Cut butter in with pastry blender until crumbly. Sprinkle over each loaf.

    Bake for 45 minutes.

    It's really good, dense bread and is great with strawberry cream cheese spread on top. When I make it we usually eat it for breakfast... :)
