    I want to cook a terrific romantic dinner for my fiancé any ideas?
    He has gone through a lot lately and is very stressed out. He's having a little trouble at work and with our finances and has a hard time letting me take care of everything so I thought I'd take his mind off it by cooking him a little romantic dinner. Any thoughts?

    Romantic Dinners

    My beef brisket recipe


    Brisket Stew with Tomatoes and Mushrooms Recipe

    4 tablespoons vegetable oil

    2 pounds beef brisket coat with flour and brown
    2 large onions
    1 medium clove garlic, crushed
    1/2 teaspoon dried thyme
    1 bay leaf
    2 Tablespoons parsley

    4 (14 1/2-ounce) cans diced tomatoes, drained

    1 to 2 cans beef broth

    Salt and freshly ground pepper to taste

    Sautee and add
    8 ounces pearl onions
    8 ounces medium mushrooms, quartered
    Green and red peppers

    Heat 2 tablespoons oil in 4- to 5-quart stew pan or Dutch oven. Add beef and brown over medium-high heat on all sides.

    Add onion to stew pan and cook over low heat, stirring often, about 7 minutes or until softened.
    Add garlic, thyme, bay leaf and parsley stems salt and pepper

    Stir in tomatoes and beef broth, just enough to just cover beef.

    Cover and cook over low heat, stirring occasionally and adding more water if pan becomes dry, about 3 1/2 hours or until beef is tender when pierced with tip of a sharp knife.

    If too thick add some v8 or more beef broth

    If too thin add flour paste stirring in as you add it.

    I have some recipes I tend to do for special occasions...

    or when I want some "bonus points" for good behavior... funny how I always try to redeem them for naughty behavior. Well, I think its funny. Don't know if my wife does... =)

    uhmmm...

    beef tenderloin roast is simple, great, but very pricey. If it didn't cost an bundle id make it more often. You can spend $20 plus for a small roast thatll more than feed you both and give you some yummy sauce for accompanying potatoes. Takes maybe an hour and a half of puttering in the kitchen. Again, costly, super tender, cut of beef.

    I have a great recipe for chicken piccata... basically a sauteed chicken in a wine/chicken broth sauce with garlic, capers, and lemon. About an hour of work, results are great, and you get an excuse to open a bottle of wine. One of my all time most requested. Not as costly. Goes great with sauteed asparagus. The leftovers never last more than a day. A definite you-dont-get-this-everyday meals since its not on a lot of menus.

    another recipe for "cajun" shrimp alfredo. I use the alfredo sauce base from the grocery store and do some add ins to make it much better and yummy. Again, goes great with a white wine, or even his fav beer.

    uhm...

    flank steak is an easy one to make, less costly than the tenderloin roast, but I tend to grill it... so if you don't grill much it might be different territory for you.

    then again, my first romantic date with my wife involved a bucket of KFC, a bottle of champagne, a blanket in the park followed by music at the blues bar. The food doesn't always make the night, y'know. Anywhoo...

    for accompanying sides I commonly use one or more of the following...

    garlic mashed potatoes (not tough but dirties a mixer)

    herbed roasted red potatoes (easy to do)

    fresh green beans in olive oil/butter sauce (easy)

    asparagus in garlic/butter sauce (not tough but need to pay attention)

    I'm not really a great cook, but just thought I'd add maybe a fun dessert? Try chocolate fondue with lots of dipping items! It'll take his mind off everything but the moment.
