    Sausage & peppers
    Hi,

Below is a recipe from Greece. It delicious with crusty bread to mop up the rich juices

    SPETZOFAI

1/2 kg of a spicy sausage
1/2 kg of peppers, preferably green and spicy
    5-6 fresh tomatoes
    Salt

Cut the sausage into small pieces and slightly fry them.Wash the peppers and cut their upper side in order to remove the seeds. If the peppers are large we cut them in smaller slices. Slightly fry them until they sweeten. In the meantime, place a saucepan on the fire with the chopped tomato and the needed salt and, when it starts to boil, add the fried peppers and the sausage. Boil them with a little water. If the sausage has enough fat do not add. Any oil, as it will get too greasy. On the other hand if the sausage does not have enough fat add the appropriate oil.

    Note!
We have to be very careful buying the sausage because it must be spicy; not a
Frankfurter, or something like that if we want to be successful.

    Pete
