    I am trying to get my scrambled eggs more fluffy and well done at the same time, however they always come out dry and flat can you help me.

    Hi cosmith,

    Try using less milk, you don't need much if any.

    Also try increasing the heat and make sure your skillet is preheated well before adding eggs.

    Fresh eggs make a difference and I notice that organic come out fluffer but that may just be in my head.

    You should always stop cooking the eggs before they look done, because if they look done in the pan, they'll be overdone on the plate. Plus, you should wisk the eggs heavily before cooking them, wisking adds air to the eggs, making them fluffy.

    Mix eggs with a bit of milk or cream - or you can add 1 T. or so of cream cheese (it melts quickly and makes the eggs taste heavenly). I like to scramble my eggs using a whisk instead of a spatula... also, I cook in light olive oil with just a bit butter (for flavor). Removing from the pan when the eggs look just a little wet, but not runny... they will continue to cook after they are removed from the pan. Salt and pepper to taste. Yummy!
