    Why does the enzyme lactase react with lactose but not with sucrose?

    The enzyme lactase has an active site that will only break down lactose substrate (into glucose & galactose) because of its shape. Sucrose is broken down (into fructose & glucose) by sucrase as its active site fits with sucrose.

    All enzymes are substrate specific & will not break down anything other that what it is meant to.
