I need to either caulk or mortar the space between a wooden door frame and the stone/mortar frame it is installed within. Is there a caulking product available that will mimic mortar in color and texture?

Yes there are several "caulks" in a tube that look like cement or mortar. Check in the caulking aisle in larger home stores. Colors are usually gray only.
