What size Pex tubing is best for bathroom plumbing?

Regular 1/2" is fine. keep in mind that your temperature control valve on shower likely has only a 3/8" hole so even if you bring in 1" supply, your pressure on your shower is set there in the valve.

You can rent the pex tubing crimper from HD, otherwise its like $200 to buy.

If it's just a generic full bath, a 3/4" cold feed and a 1/2" hot feed should be sufficient.

OTOH, if you're installing a tub/shower valve with 3/4" inlets (Dornbracht, Grohe or Jado, for example) or intend to have a shower with multiple functions (Fixed shower head, hand held unit, rain pan shower head and body sprays, for example) you should bring a minimum of 3/4" hot and cold feeds.

If the shower is going to have two or three separate functions with separate volume controls, then you should provide 1" feeds for optimum performance.
