To have food to eat.

Probably for the same reasons that certain people do now.
We have to eat. Some people choose to, or feel a calling to till the land in order to help to provide food.

I'm not sure anybody really knows why agriculture appears to have blossomed 10,000 years ago or so.
I just heard on the radio that there's evidence that people were grinding grains and roots as early as 100,000 years ago, much earlier than previously thought. I personally am not surprised.
