    Doing great! How are you.

    Chicken Cackalacky is super easy:

Poach 2-3 chicken breasts and cut them into bit size pieces
Make 2 boxes of Uncle Ben's Wild Rice according to the box
    1/2 cup slivered almonds
2 cans of cream of mushroom soup (or cream of whatever you like) I use low sodium
    1/4 cup of mayo
    Mix everything together
    Top with breadcrumbs
Bake 375 for 30 minutes covered then 10 minutes uncovered.

    It is AWESOME!

It's a favorite! Great for potluck, not to be morbid but I also make that when someone has a death in the family.

On the menu at chez Albear its cheese and bacon fritters with croquets, the chef recommends a nice cold coke to wash it down with.
