Yes, Adam, I do like venison.
Ok here is a recipe you will have to try. I want to try it out if i get me a deer this season.
Oniony braised venison
1. 6 bacon slices chopped – i always use more
2. 2 lb venison, i prefer the tenderloin .make sure you thouroughly rinse the meat
3. 2 – 10 ½ oz cans condensed campbell's french onion soup
4. pepper – amount varies to taste.
5. 1 medium green pepper, cut into rings
6. 1 package egg noodles or rice
7. sliced mushrooms (optional but damn good! )
8. 2-3 cups flour (seasoned to taste) or “ky kernel batter”
In skillet over medium high heat cook bacon until light brown, remove bacon from pan. I prefer a lg skillet or dutch oven.
Meanwhile cut meat into stew meat sized chunks and coat pieces with flour mixture.
In hot bacon drippings (if you only used 6 pieces of bacon you will need to add some oil) fry meat until well browned on both sides.
Stir in undiluted soup and pepper, heat to boiling, reduce heat to low, cover & stir occasionally.
Simmer 1 hour or until meat is fork tender. (good time to drink a beer or 2)
Check consistency of gravy and if too thick add water in ½ cup increments. If gravy is too thin add 2 tablespoons of flour to 1 cup of water and add to gravy to thicken.
If desired stir in mushrooms then arrange pepper rings over the meat, cover, continue cooking until pepper rings are tender.
Prepare egg noodles or rice as directed.
Serve meat over noodles or rice.
If you don't have venison you could substitue steak or round.
