However, the next time I text her, which would be more attractive to receive? Something like, "You just popped into my head so, hi...now please stay out of there." Or, more sincere like, " Was just thinking about you". I don't want to sound too needy. Thx girls!

By the way, I'm a guy.

I would say neither. Maybe when you get more comfortable with each other you can use those lines. Stick with the traditional "hey, how's it going?" If she was interested in getting to you know better, she would respond. It won't matter what you say to her, so why not take a less risky route?

Or you could be like "hey there how's it going? I haven't talked to you in a little while and i wanted to see how you are. Anything new going on?"

    That's a conversation starter.

I think it's important to remember also that if something does come of this , that long distance relationships can be a lot harder to maintain than normal ones. So before you invest anymore of yourself in this , read some material on the pitfalls etc. of LDR's and make up your mind whether your up for it.

Sad but true... M has made a very good point I didn't even think about. There could be a lot of stress in maintaining a LDR. Also Vegas is a swinging town and sometimes things are more romantic in a place like that. :)
