    The Many Uses for Cream Cheese
    Hi, All!

    Okay, I know that there are a lot of us who like to use a variety of things when cooking.

    My question has to do with cream cheese. I've just now started to explore the possibilities with using it.

    Yeah, my keepers don't let me out much! Usually only at night when there's not as many people around...

    But, that's another subject... :eek:

    Spread it on celery, add a bit of black pepper to the top. Use it when making mashed potatoes...

    What might be some other possibilities for the use of cream cheese, please?

    I really am starting to fall in love with the stuff!

    Well the most popular or more uses for me is on a bagel.

    Now they have come up with so many different flavors , etc... I was over a relatives place a few weeks ago and they were using flavored cream cheese a chip dip... and it was good.

    Cooking with it, now that is something very new, looking forward to seeing different kinds of recipes using crème cheese.

    Well, me too! That's why I started the thread! I've cooked with it. Mashed potatoes. Used it on celery. Not really anything beyond those food items though...

    Fettuccine Alfredo
    8 ounces cream cheese
    1 cup Parmesan
    1/2 cup butter
    1/2 cup milk
    Melt all together and mix with Fettuccine noodles

    Pollo Fundido (my favorite)
    Spicy chicken and cream cheese in a flour tortilla and deep fried. Served with Queso sauce on top.

    And I believe KP mentioned (in another thread) sliced Salami... spread with cream cheese and rolled. I like to roll mine around pickled asparagus.:)

    How do you melt that first part of what you posted all together, JD? Fry it? Microwave it? I don't really know...

    In a sauce pan on lowfirst butter than add the milk.
    When the milk is warm add the cream cheese in chunks until it is all melted than add the Parmesan

    When it is all melted together, toss gently with your Fettuccine:)

    There is also Cheese Cake that is made from cream cheese:)

    HERBED SOUR CREAM BLUE CHEESE DIP

    1 cup sour cream
    8 oz Philadelphia Cream Cheese, softened
    1/3 cup blue cheese (or blue cheese crumbles)
    2 tablespoons fresh chives or scallions, minced
    2 tablespoons fresh parsley, minced
    1 tablespoon fresh herbs (thyme, rosemary, basil, oregano)
    2 teaspoons fresh garlic, finely minced
    1 teaspoon Mrs. Dash (optional)
    1/4 teaspoon red pepper flakes
    1/4 teaspoon cracked black pepper

    Allow cream cheese to sit at room temperature for 20-30 minutes before using.
    In a medium bowl, beat cream cheese using a hand mixer until soft. Add sour cream, blue cheese, and remaining ingredients, mixing well.

    Cover and refrigerate one hour before serving.


    Serving Suggestion:

    Serve accompanied by tortilla chips, celery sticks and cucumber strips, lemon and tomato wedges and a small bowl of hot sauce. Sprinkle vegetables with celery or sea salt and pepper.

    Here is my cake recipe. (It's from my favorite cookbook - Southern Living.)

    Cream Cheese Pound Cake

    Ingredients
    1 1/2 cups butter or margarine*, softened
    1 (8-ounce) package cream cheese, softened
    3 cups sugar
    6 large eggs
    3 cups all-purpose flour
    1/8 teaspoon salt
    1 tablespoon vanilla extract

    Preparation
    Beat butter and cream cheese at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, 1 at a time, beating until combined.

    Combine flour and salt; gradually add to butter mixture, beating at low speed just until blended after each addition. Stir in vanilla. Pour batter into a greased and floured 10-inch Bundt pan.

    Bake at 300° for 1 hour and 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove from pan, and let cool completely on wire rack.


    *My notes: I never use margarine when I am baking, but that is my personal quirk.

    This cake is fabulous by itself, but I have also served it with a lemon curd and have also served with strawberries and cream.

    I have also used almond extract (because I had already started and realized I was out of vanilla).

    I have also greased the bundt pan very generously with butter then put 1/4 cup of finely chopped pecans followed by a dusting of confectioner's sugar rather than the traditional grease-n-flour.

    Another way I like cream cheese is in a layered dip.

    I make a dip by mixing refried beans and chopped green chiles and spreading that into a rectangular pyrex dish then on top of that I combine a block of softened cream cheese with a couple tablespoons of taco sauce and a packet of taco seasoning (to taste) and spread that on top of the beans and then cover it with finely shredded colby jack. I heat in the oven for about 10 minutes, let it cool then load it up with shredded lettuce, tomatoes, black olives and more salsa and shredded cheese. It's good and easy.

    Clough, have you ever tried putting cream cheese in your pasta sause? It tastes great!

    I also make cream cream sandwiches with tomato, onion, lettuce, cream cheese, american cheese and salt and pepper.

    I haven't ever tried it with the pasta sauce. I'll have to give that a try! :)

    So, would cream cheese be the main ingredient in your sandwiches?

    Actually, I make it without cream cheese sometimes, but the sandwich tastes way better with the cream cheese. I would say tomato is the main ingredient.

    As an appetizer I love slices of toasted bread with cream cheese and a piece of smoked salmon on top... delicious!

    My aunt makes this cream cheese dip. Its very good you need some cream cheese and some sugar and vanilla extract and mix and than dip some strawberrys in it. Very good. Please tell me how it turns out

    No one mentioned "Marshmallow Eggs". Hmmmmm, it's one of my favorites. Actually I made up the name.

    It's really an omlett made with 1" chunks of cream cheese in the middle with the omlett folded over. You need about 2 ounces of cream cheese for this. I love this way of eating eggs in the morning and make this quite often. The trick is to add the cream cheese almost at the start of cooking the eggs as you want the cream cheese good a hot when you dive into the omlett. Yum. Marshmallow Eggs. Served with salt and pepper and maybe some toast on the side. Very filling if made with 3 eggs by the way.

    I just got to get me some eggs, now! My kids in their zealouness to help be clean the house, also "attacked" the refrigerator!

    Bless their hearts, but they threw away a lot of stuff that I wouldn't have thrown away yet!
