    I believe it's the Sous Chef that is just below the Executive Chef? I am guessing here.. .

    That would be a Sous (pronounced "sue") Chef. There can be more than one in a given kitchen. They answer to the Head Chef or the Executive Chef, but that title can vary between kitchens. Sometimes, there is both an Executive Chef, who is more administrative in capacity, and the Head chef, who is the boss of the actual cooking.
