What careers can I pursue with a medical assistant?
What can I do with just the medical assistant or what can I go back to school for with it?

You can become a medical assistant, sorry to sound silly but that is the position that you get with that certificate ( or license if licensed in your area. It really does not give you anything to move to, you can go back to school for a LPN and latter a RN is you wish.
