    How do you record wages and employer payroll taxes separately on journal entries

    You can use clearing accounts to denote payroll taxes of all kinds including those that are deducted at source (and are therefore not an employer cost), but will eventually be payable via a scheduled remittance to the applicable union/gov't agency, etc.
