Hi! jingo1, and welcome to AMHD :)
One must keep an open mind when it pertains to nature, and this spaceship we call Earth.
Your Purple Amaranth, Red Amaranth, Prince's Feather, Mexican Grain Amaranth
Amaranthus cruentusis is listed as being in GB as far back as the early to mid 1800's
Lindley Library
Here are a few listings from THE ROYAL HORTICULTURAL SOCIETY

Sage advice to have the plant properly identified, if it is to be consumed.
You are correct in your assumption that this plant is edible. Whether it is palatable is up to the consumer.
amaranth plant. if I'm right, then it's edible

There are too many plants, and even other things, that look like something edible and are actually harmful to consume. I always make sure that I know for SURE what something is and that it IS edible before consuming it.

My crazy neighbor has those and seemed to pop up over night. Unfortunately she planted them all about 5 feet apart and it just lookes like a bunch of weeds towering over her white picket fence.
She should have grouped them better, and next year she is going to have a big problem with spreading.

Hi! Stratmando
Surprisingly The USDA site doesn't have a lot of pix for Amaranthus
This google images would be more helpful.
