Ok guys- I took a bits and pieces out of the suggestions here. I've prepped everything so I can just turn on the crock pot in the morning before I leave for work. Here's what I did:

I coated my beef pieces in flour and seared in a pan with just a little oil until they were brown and tender. Lightly seared, didn't cook them all the way 'done'.

I cut my potatoes in 1"- 1 1/2" chunks, added baby carrots, frozen peas, and one onion halved, then sliced.

I used the McCormick's seasoning since that seems to be a fave. Thing is- I bought the "Pot Roast" instead of "Beef Stew" but I don't suppose it'll make much difference. They're both pretty much beef in veggies. I also added a pack of brown mushroom gravy and a little more water (total about 3 c. of water).

Everything smells good and I'm hoping I'll have a delicious meal waiting when I get home from work tomorrow.

I will let you all know...

Actually ,I was thinking about it for my sons, even though they are adults they love junk food!
They claim it is my fault for depriving them of it when they were little.
Which I did not do ,just limited it!

So after 10-11 hrs of cooking my meat was tender and juicy... but my potatoes weren't quite done. So I cranked up the crock to high for another 1hr and a half and that did the trick. It was delicious! My son would only eat the peas.

    I ate 2 bowls! :p
