    Simple.. an eye! Let's break it down through each line:

    Pronounced as one letter (eye sounds like the letter I)
    And written with three, (E.Y.E.)
    Two letters there are, (an E and a Y)
    And two only in me. (I only have two eyes)
    I'm double, I'm single, (not 100% sure how this fits, maybe because you can look at one eye or both)
    I'm black, blue, and gray, (three colors of eyes)
    I'm read from both ends, (eye is eye spelled backwards)
    And the same either way. (read above)
