    Easy Tomato Sauce
    Hi there looking for an easy pasta sauce... hate wasting my money on pesto etc...

    There are some people that don't like meatless pasta (I'm not one of those people, I hate meat in my pasta.. lol) so I hope this is a recipe you'd like. I absolutely love this dish! :)

    Capellini Pomodoro

    Ingredients :

    8 Medium Tomatoes
    11 Basil leaves, fresh chopped
    14 oz Dry Capellini pasta
    2 1/2 clove(s) Garlic
    6 Tbsp Extra Virgin Olive Oil
    Salt and freshly ground pepper

    Procedures :

    Chop tomatoes, season with salt, pepper, chopped basil, garlic and oil. Cook on medium heat until the tomatoes are cooked and the flavors are well infused.

    Cook the Capellini in salted boiling water and drain.

    Toss Capellini with tomato mixture. Sprinkle with some Parmesan Cheese.

    Rigano parmarigano... sounds good!! And yes I'm not a meat everyday person, I love a bit of veggie pasta! Do you not find that it's a bit tangy? Usually TV chefs use a bit of sugar. Is this entirely necessary?

    Actually in my regular spaghetti recipe I add a bit of brown sugar (about a tablespoon) to counteract the acidity of the tomatoes, but in the recipe I gave you above its actually better without the sugar. :)

    I use one can 28 oz whole tomato, 1 can diced with the spices, and one small can tomato paste, clove garlic, (optional throw in chopped onions, diced peppers and sliced mushrooms) bay leaf, basil, oregano, salt and pepper to taste. When it gets to the consistency I want I taste it and add a little sugar if it needs it but the spices usually take away the acidity.

    2 cans crushed tomato's
    1 can tomato paste
    1 tbsp brown sugar
    1 tsp olive oil
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1/2 tsp crushed red pepper
    1 medium onion diced
    3 cloves garlic minced
    6-8 mushrooms, sliced'
    1 green/red pepper sliced
    1 carrot, shredded
    1 can beef broth
    1 lb. lean chop meat
    3 minks, Italian sausage
    1 tsp. basil
    1 tsp. oregano
    1 tsp italian seasoning
    Salt and pepper to taste
    1 bay leaf
    3- tomato paste cans of real red wine

    Can be cooked in crock pot, or... sauté onions and garlic with olive oil add beef and sausage till brown, add crushed tomato's, paste and remaining veggies, broth, wine, spices, cook slowly 4-6 hours stirring occasionally.

    Here's one for Marinara:

    Marinara Sauce

    Ingredients:
    1 – tbsp EVOO (extra virgin olive oil)
    3 – cloves of garlic, finely chopped
    1 – tbsp chopped flat leaf parsley
    1 – 15oz can crushed tomatoes
    Salt and pepper

    Directions:

    Heat a small pot over medium heat. Add EVOO, garlic and pepper flakes. Stir and cook 2 minutes. Add parsley, tomatoes, salt and pepper. Stir sauce, bring to a bubble and simmer 5 minutes over low heat.

    And here's one for spaghetti sauce. I don't measure when I make it - I just add until it tastes good.

    Spaghetti Meat Sauce

    Ingredients:
    1 – tsp dried basil
    1 – tsp dried oregano
    1 – bay leaf
    1 – 1 ½ - lbs ground beef
    1 – tsp salt
    ½ - tsp granulated garlic
    1 – 6oz can tomato paste
    1 – 16 oz can tomato sauce
    1 – 28 oz can crushed tomatoes in juice
    1 – 1 ½ cups beef broth
    1 – tsp sugar
    1 – tsp Worcestershire sauce
    1 – tsp soy sauce
    1 – tbsp dried parsley
    Pepper to taste

    Directions:
    Brown ground beef in skillet. Add remaining ingredients. Simmer uncovered, 15 – 20 minutes.

    I'm not sure what kind of pesto you buy, but I've used this mix: Knorr Pesto Sauce Mix and it's not bad. If they don't have it in your grocery store, you can buy it online at a few places. You can also make your own, if you can get basil for a good price: Pesto Recipe - Basil Pesto
