Basically they aid in optimizing vitamins, cell regeneration, helping your thyroid, metabolism, building your immunity and detoxing, etc.
Amino acids are in everything. I think you get more from fruits and vegetables than from meat.

    These are some amino acids

    L-glutamine--fuels muscles and brain

    L-carnitine--energizes muscles

    L-Lysine--good for stress

    L-Tryptophan--(in poultry) natural sedative

    L-Isoleucine

    L-Leucine

    L-Methionine

    L-Phenylalanine--mood balancer

    L-Threonine

    L-Valine

    L-Cysteine

    L-Glycine

    Non essential amino acids:
L-Taurine--balances electrolytes --sodium/potassium, aids in digestion
L-Arginine--energy and vitality dilates blood vessels
    L-Alanine--metabolism of glucose and tryptophan
    L-Aspartic Acid--for depression
    L-Proline--produces collagen and cartilage
    L-Tyrosine--mental function
    L-Asparagine, L-Cysteine & L-Cystine, Glutamic Acid, L-Glutamine, L-Glycine, L-Ornathine, L-Serine,

Amino acids are what proteins are made of. Amino acids come in about 20 kinds. Your body can make most of them but not all of them (The ones we can't make are called the “essential amino acids”). That's why you need to have protein in your diet.

A protein is just a straight chain of amino acids (called a polymer). Each protein has hundreds of amino acids & each kind of protein has put together the amino acids in a different order to do different things (eg hair).

OBTW… meat is, by far, a richer source of proteins than fruits and vegetables! And while tryptophan is an essential amino acid it is found in a variety of proteins / meats.
