    I need some vegetarian recipes that meat eaters would like.
    I hope that makes sense. I would like to prepare some vegetarian dishes from time to time. I don't want to do vegan recipes--i love dairy. I just want some dishes that are tasty and full of vegetables, but good enough really enjoy and serve to my husband. Please help.:o

    I'm a vegetarian and I make vegetarian chili.
    I use vegetarian pinto beans, onions, diced tomatoes and spices. Instead of meat, I add a little dry rice.

    Easy Five Bean Soup
    2 T Olive Oil
    1 Medium Onion, diced
    1/4 cup celery, diced
    3 T barley, rinsed
    3 cups water
    1 can of Pinto Beans
    1 can of black beans
    1 can of kidney beans
    1 can of navy beans
    1 can of garbanzo beans
    1 cup of sweet corn, fresh or frozen
    1 can of diced tomatoes with roasted onion
    1/2 t. dried basil
    1 1/2 crushed bay leaf
    1 t. salt

    Heat oil in a soup pot, sauté garlic and onion. Add water and the rest of the ingredients. Cook 30 minutes. Serves 10

    A great vegetarian chili always satisfies me... especially if you add lentils! The lentils have a heavy weight that seem to take on a meaty texture when cooked so they just fall apart!

    Garden Burger with Grilled Portabello Mushroom on top... to die for.

    You can use Portabello Mushrooms as a meat substitute as well, since they have some substance to them. They have a great flavor!

    I know it's an old thread, but I'd like to bump it anyway, as I have a couple suggestions:

    1. "Twice baked" pumpkin or winter squash.

    Cut the top off a pumpkin or squash (like you are making a jack-o-lantern) and scoop out the seeds.
    Bake for about an hour at 350
    Make up some "stuffing" like for a Thanksgiving turkey.
    Scoop out the pumpkin meat, mix with the stuffing
    Put the stuffing mixture back into the pumpkin shell, and bake until stuffing is done.

    2. Stuffed peppers:

    Use a mixture of cooked rice, cheese, and beans as a stuffing. Try it with roasted poblamo peppers for an extra added kick.

    3. Nopalito quesadilla's

    Trim and dress nopalitos (cactus paddles) and parboil in water until slightly soft
    Make the quesadillas with cactus paddles and pepper-jack cheese.

    Vegetable lasagna is also pretty good... use zucchini in marinara sauce instead of meat.

    Mmmmm... I'm getting ready to plant my garden. I always plant squash and pumpkins.
    I need to try the twice baked pumpkins and squash. I make a vegetarian stuffing at Thanksgiving. I use water base vegetable broth, celery, onions, sage and seasoned packages of stuffing. My family loves it.

    I was a vegetarian with a meat eating husband for 6 years I bet him I could get him to eat tofu and he wouldn't know and promised he'd love it. I won.

    Take your favorite lasagna recipe, cut out the meat. Where you would normally put ricotta or cottage cheese instead replace with tofu, chopped fresh spinach and a cup of parmesean cheese. Cook like you normally would, good luck .
