    Mistake with rice pancakes
I tried making this recipe tonight:

    Cooks.com - Recipe - Rice Pancakes

I don't know if it's a terrible recipe, or if I did something wrong. I followed the directions, used 4 eggs, 4 cups of milk, 1/4 cup of cooked rice. And when putting them to the pan, they come out inedible-- they're crisped on the outside, but it tastes like batter on the inside. Can I salvage this mix? It would be a waste to have to throw it away.

Make the pancakes smaller I think your going to have to just experiment to big and they won't cook inside to small and they will be frisbies, same if the oil is to hot it will cook the outside to quickly.

That dinner is over, but if you're still trying to figure out what went wrong that fateful night, I'll give your question a shot. I took a look at the recipe. My first guess is that you may have had your rice over a little too much heat, which would cause you to lose too much liquid. If this was the case, your batter would not have been thin enough. If a batter is too thick, it can result in exactly what you described: the outside cooks, but the inside doesn't. By the time the heat were to penetrate the inside properly, the outside of your rice pancakes would be overcooked. Potentially, you might have been able to thin the batter down with a little milk or cream until it reached its desired consistency.

I'd love to know if you were able to salvage your recipe, and if so, how you did it. Also, how were the rice pancakes, at least in taste? Now you've got me curious.
