    Is expired orange juice safe to use for cooking in a restaurant where the public will be eating?

    It should be okay as long as it doesn't smell or taste sour or bad in any way.

    Honestly, NO.
    If it was ever discovered that the ingredients used had passed their respective expiration dates there would be serious, possibly legal, implications.

    I did clarify in comment in curlyben's reply that since it is a restaurant Curlyben is right.
    I meant that the expiration date does not always mean something is bad.
