Hello what is the best way to cover plaster wall holes about 3" big

I need to rehab my bedroom closet due to old plaster, and lack of shelving, etc. The plaster is in rough shape, and wood literally take me more time to repair, then to drywall over. However, it's hard to find the studs without causing too much damage to the plaster and wood lath. Any tips on...

Ok, just want to check if it is kosher to put a wall frame over top of an old plaster wall, and then drywalling over that. This would negate any removal of the plaster and lath, saving a lot of work! Also leaves it open to move wiring around, which wouldn't be possible if I just drywalled right...
