Grilled, but then make sure to cut it across the grain. By cutting it across the grain of the meat you ensure that it is tender. Also be sure to let the meat rest because you do not want it to lose it's natural juices.

Be sure to not over cook flank steak. If it is overcooked it tends to turn into shoe leather.

Thanks all. I think I can screw this up easy. But the good thing I will get 6 chances to get it right.

Make a simple sauce to go with it.

2 cups of red wine
1 tablespoon of butter
Chopped green onions

Simmer the above in a sauce pan then pour over steak after grilled.

Beat it, fill it with seasoned cheese and roll it up, then grill it.:) then put J9s sauce on it.

I just use what ever I have on hand as far as cheese goes and then put herbs and seasoning in it also.

You need to toothpick it though.

To all

It came out great.

Used Muenster cheese with garlic, salt , pepper and cloves.

Rolled it long ways and wrapped in tin foil. Grilled about 5 minutes each side. Used toothpicks to hold together.

Served with J_9 's sauce, cooking it down to thicken.

Mash potatoes and steamed fresh asparagus.

The only problem is now I have a new job. Wife said if I cook like that she will not. LOL.

Thanks to all for your help and advice.
