I'm installing a 4 wire, 50 AMP GFCI for my hot tub. My question is at my main breaker for the house where I'm taking power from, which bar is neutral and which bar is ground, or does it matter?

If the main breaker is in the panel that you will install the hot tub circuit breaker, both the neutral bar and equipment ground bar are connected together.

So you probably both whites and grounds mixed on each bar. Does not matter which you use.

In the case, for consistency, we will usually use the neutral bar that has the main neutal conducotr connected to for all the brach circuit neutrals, and the equipment bar for the greens and bare grounds, but again does not matter.

But, if, for example you have a main panel, but the main breaker is outside, then the neutral bar is isolated and insulated from the equipment bar.
