Once cook, plunge into cold water.
Not only does it stop the cooking process, but makes them easier to peel.

Let them age. Use older eggs. Fresh eggs (boiled) are harder to peel, than older eggs...

I do mine under cold water. But I put my eggs in cold water as soon as they come out of pot.

Your problem isn't really a bad one. The reason they are hard to peel is because they are Too Fresh! If you can put aside the amount of eggs you want to boil for at least 1 week ( 2 would be even better ) then you'll have a much easier time peeling them. Store bought eggs are often at least 1 week or more old by the time they are put on the store shelves, that is why they are almost always easier to peel.
    Hope that helps.

I am wondering if anyone knows why farm fresh eggs would have an unpleasant odor. When I crack the eggs, sometimes I get a smell, not rotten but not pleasant either, and I notice the smell sometimes when I am eating them also. Any advice on this?

Are farm fresh eggs more watery than store bought eggs? Is the yolk a pale yellow? [ 2 Answers ]

I buy my eggs from a local farmer. But the white is runnier than the ones I buy at the store and the yolks are pale yellow almost white. Does that mean he's storing them or that he's feeding them something different.
