Actually xp 2000 it was an operating system which solved the faults in windows 98 such as internet explorer and many applications which wasn't work well there,
While 2003 is new version of windows xp 2002 with minor modifications and as every one knows its more graphically represented and easy to use

windows sever 2000 is basically the server version of windows 2000 pro (NT5) and came out in 2000 and is proper outdated now

windows server 2003 is the server version of XP (NT5.2) <-- notice XP x86 is NT5.1, 5.2 is x64 (server 2003 comes in both versions though only enterprise and datacenter editions support x64)

2003 has much more features and there are 4 different versions of it depending on what you want it for

both support mirroring and raid-5 which the desktop versions don't, look on Google for a detailed list of the features
