This is a bit vague, I saw this a few years ago. I remember there was a hunchback and a woman being tortured, and something involving monks (or guys in robes?) examining a pig's heart. No idea what the movie was though.

Not sure if this is what you are referring to, but it sounds like The Name of the Rose based upon a book by Umberto Eco. The original movie was made in 1986. It is a murder mystery set in an abbey during the 14th century. All the elements that you are describing are in this movie.
