I thought it had Mel Brooks in it, but when I looked up his imdb page, I didn't see it.

Anyway, there's a Jewish man, and he's just learned that he's to be married to this young girl. I think her name is something like Saramindle (I seem to remember that he had a photo he shows everyone, but no one thinks she's attractive). He's got to travel across the country to go get her. I'm not sure what happens, but he needs to be protected on his journey, so a man comes along with him to be his personal bodyguard/gunslinger, but they have nothing in common. His bodyguard is a typical old West movie character with no manners, or respect for foreign religions. At one point, they are running from the bad guys with their horses trotting along behind them because something in the Jewish religion prohibits our main protagonist from riding until the sun comes up, and the bodyguard is upset, and didn't get why they are following what he sees as a silly rule. I remember another scene where he meets an Amish man, and they have a moment of respect for one another for similarities they see in their religions.

I hope that's enough info, it's been more than 14 years since I've seen the movie.

That sounds like The Frisco Kid:

The Frisco Kid (1979) - IMDb (http://www.imdb.com/title/tt0079180/?ref_=nv_sr_1)
