If I leave a 40 gallon gas water heater on pilot for 4 months, but shut off the water main... will the water evaporate in the water tank?

No. The water heater, with all faucets closed, amounts to a sealed tank.

That small pilot doesn't give out enough heat to heat up 40gal of water.
