My daughter was arrested and indicted for engaging in criminal activity in Texas. She posted bond, was released and then bondsman abruptly went off her bond. For almost 3 years she has been waiting for a court date or to be arrested. Neither has happened. What is the statue of limitations on this charge?

There is none. A SOL is for the time from when the crime was committed, to the time they are arrested.
She was already arrested and made bail. So the clock stops
Also, the bail agent can not just "go off the bond" and if they do, they must pick her up and turn her over to the jail. So it is possible, that on court records, she is still on bail.
The other, there is a warrant for her arrest, but they are not sending anyone to look for her, but will wait till she is found at a traffic stop or some other ID process
She needs to have her lawyer check the records and find the status of her case.

While a SOL wouldn't apply, there may be a speedy trial problem, depending on the speedy trial rule in Texas.
