I was charged with theft under, possession of property by crime, and assault x 2 in GTA Ontario (York Region).
I am an Adult. This is a first time charge with no prior histories. Shoplifting was a small value item. What is the likely outcome of this?
Can they charge me for both Theft under and possession of property?
What can be done about the assault x2?

Yes, it appears, you said they have already charged. Sometimes they charge you will all of them to allow for plea bargain to drop one of them.

The assault, depends are you guilty, what is the evidence ? A good plea deal often is best. You most certainly need an attorney and need to get one before you talk to anyone.

A plea deal suggests that no matter what I will be convicted of something. I don't suppose there is any chance of a discharge? I know what I did was wrong and I am extremely remorseful. Not a day goes by where I don't regret my actions that day.
The assault x2 was because there were 2 loss prevention officers and one claims that she fell on her knees and hurt them while the other claims that I kicked him in the shin (which is definitely in dispute). There was never any intent to cause harm or injure but does that matter?
What chance do I have when its 2 people's words against mine? Can medical records be asked to see how seriously the supposed injuries are?
Does intent and reasons (regarding the resistance) come into this at all or just at the time of sentencing? What about extreme remorse for my actions as this was completely out of my character (first time of ever doing anything wrong)? I can't sleep, I can't eat and I am extremely depressed as I am fully realizing the huge negative impacts of my poor decisions. The store, the LPOs, and most importantly how my family will ultimately suffer many of the ramifications and restrictions of a father with a criminal record.
Will the impact of a judges decision on my life have any effect as a conviction will likely cause me to lose my jobs and my family will be out of a home.

Is the likelihood that I will be convicted of 1 of the assaults and the theft effectively ruining the rest of my life and that of my family?
