I am a US citizen joining the teaching faculty at the International University of Monaco.

Since I will be teaching in Monte Carlo for 6 months and Italy is nearby, I would like to live in San Remo, Italy during this period to learn Italian.

Since my work is in Monte Carlo - not Italy - what type of Visa is appropriate for me and what are the documents I must provide with my application?

Do I need the help of a lawyer in Italy?

If you plan to live in Italy... you need a visa to live in Italy... as well as another one to work in Monte Carlo... I assume that's where the University of Monaco is.
