I have a 3 way switch with a fixture at the middle of the run.
I am replacing a one-bulb fixture, with a two bulb fixture.
The cable is 3 wire (Black, Red, White & ground).

Not sure how to hook up the new two bulb fixture, which comes with a black & white wire for each bulb and one ground wire.

When removing the old one-bulb fixture the red wire from one side of the cable was connected to the black wire of the fixture and the white wire from the fixture was connected to the white wire of the other cable. The 2 back wires were capped together and the other red and white wire from the cable were capped together. The ground wire from one side was screwed into the box, and the ground wire from the other side was screwed into the box (in a different spot).

How do I hook up the new 2 bulb fixture?
I tried following the same logic as the one-bulb, (i.e. red to black and white to white and left the 2 black cable wires capped as they were)? Also the new fixture comes with a mount with a green screw for the ground, but do I connect all 3 grounds or use the new green screw with the new fixture ground and leave the other 2 grounds screwed into the box as they are?

That sounds right. Just leave it as the old one was, just with an extra black and white from the fixture.
