Rock,
What you are describing does not make sense.
Do you have two or three switches? Generally speaking, the blue wire on the fan / light is for the light. The black is for the fan.
It sounds to me as if you have main power to the overhead. Then you have a switch loop down to two switches.
Normally the white wire is either colored black or has black tape on it on both ends. This wire carry's power to the switches. Then the black would return power to the fan. Red would supply power to the light. The white from the fan would connect to the white bundle in the overhead.
Can you supply us a picture of the wiring at both ends.

At the ceiling box, wrap the single white wire with black electricians tape to designate it as a hot conductor.
Connect white of ceiling fan to the two white wires bundled together.
Connect the red to either the black of the ceiling fan (will control the fan) or to the blue (will control the light).
Connect the white (with black tape) to the remaining fan/light wire.
