My son has CP and doesn't walk. We are redoing our kitchen and want to know if there is a floor covering that comes in planks that would look like wood but offer a cushion feel so when he crawls it doesn't hurt his knees.

I am sure you have considered many options here, but I wanted to pop in and just play a little devil's advocate, OK?
It seems to me that if your son has CP you really need a highly durable flooring material in your kitchen... one that can stand up to the wheelchair and the "rough play" that kids with CP can achieve.
I'm thinking durable material flooring and then perhaps a cushioned indoor/outdoor carpeting over the durable flooring or even dense foam coverings... many options here.

Armstrong makes a product called Luxe which is a vinly plank flooring, resistant to water and wear.
