I had a 1 night stand 8 years ago and fell pregnant with my son! The man in question hasn't seen him since he was born, he isn't on the birth cirtificate not has he paid any money! He now wants to take me to court to see my son! What rights does he have!

Let him.
Make sure that positive paternity is proved with a DNA test and then hit him for all the child support payments he has missed..

He has the same rights as any father. Did you go to court for child support? If not, then he doesn't owe any.
Because he isn't on the birth certificate, he has to go to court to enforce his rights, but he still has them. He files in court for visitation. The court will order a paternity test. If he's the father then, unless you can prove he's a danger to your son, he will be granted visitation. It may be supervised at first. If you don't allow him to see the child until court, the court may not look as kindly on you.
You can, of course file for child support as a separate action. Or, if you filed previously, try to collect the arrears.
Whether a one night stand or a long term relationship, you chose to have sex with him. You know have to deal with the consequences of that choice.
