Quick question. I was arrested for theft 2, and was charged with 18 months of probation, community service, etc, etc.
I have about 3 or 4 months left in my probation, and I was wondering if they look through your phone records? I was not allowed any 'direct or indirect contact' with someone and I have for many, many months. Do they look through your records AFTER my probation is up, or do they look at it all? Because I did all of my community service and theft class. I also am going to school, etc, etc.
And if they did look through my records, wouldn't they have arrested me already for violating my probation?

They may ask or require you to bring in your records before they release your probation.

Of course till it is over, you have the risk that someone will report this.

It is not likely they will but yes they can. The bigger risk is someone reporting it to them.
