How do I run the hdmi cable fron my directv into my phillips surround sound system to be able to watch TV on my epson projector.

HDMI is very similar to USB and it's a simple case of plugging the cable in each end and away you go from there.
Sometimes you do need to change the input method to HDMI, but mostly this is automagic.

When I plug the hdmi into my surround sound I get no pic or sound.. if I plug the hdmi into the projector all I get is the pic and the sound from the projector.

Model numbers?
Chances are the HDMI port on your Philips surround sound may actually be an output. If it's a DVD or Blu-ray player also, then you need to look for an INPUT and an OUTPUT.
If your surround sound supports HDMI switching/passthrough, then you will run HDMI out from your DirecTV, into your surround sound, then out from your surround sound into your projector.

Directv hd box a phillips hts3371d and a epson ex5200.

It is an output but there in no in put?

HDMI out from DirecTV box to Epson projector.
Fiber optic out from DirecTV box to Philips surround sound.
If you wish to connect the DVD player to the projector via HDMI, you will need to purchase an HDMI switcher. Otherwise you can forgo the upconversion capabilities of your DVD player, and connect it to the project via composite video (this is the yellow RCA connector usually paired with composite audio making the series yellow, white, and red).
Or the other option is to just unplug the DirecTV box and connect the DVD player in its place whenever you wish to use your DVD player. Not the most convenient solution, but definitely the least expensive.
