How do you go about wiring a 240v motor to reverse the rotation?

Depends on the type of motor.
I am assuming you are talking about a single phase motor, over 1 HP?
You have to reverse the "start" winding connections. Usually there are instructions printed somewhere on the motor or connection box.

Look at the motor connections for numbers and look at the name plate, it may say something like, "to reverse rotation, reverse wires 5 & 8", or something like that.
