If you're on probation and have transferred to a different county and you violated your probation, will that kick you back to your original county or go straight to jail?

A violation of probation normally just gets you back in jail pending a hearing with the judge on the probation. Some places may wait to see if you are found guilty, others don't.

You don't change locations because of the violation, assuming you moved there with permission.
