You go back to Court and file a Motion that the father be held in contempt of Court.

First who are "we" as in we are not allowed to see the child.
Is the court order for "we" or just for you.
Has the father given any reasons for not allowing the visit.
But yes, you take the father back to court, where he will have to explain his activities. It is up to the judge to decide to hold him in contempt. To warn him or what.

Also what State is this happening in? In some states the police will get involved and the parent can be charged with parental kidnapping if they refuse the visitation.

So YOU have one day a week visitation ordered by the court. How are you supposed to pick up the child? At the father's home or meet someplace or what. Has the father just not shown up or not turned the child over? More details would help us help you.
But the bottom line is, if the father is defying a court order you go back to court and ask that he be held in contempt.
