Okay, I signed custody of my daughter to my mother a few months back, does that mean that I also signed over my parental rights?

Did you read what you signed? Only a court can terminate parental rights, so its unlikely your rights were terminated. But we need to know more of the circumstances here.
What did you sign? Was it affirmed by a court? Why did you sign? Where is the father in this? ANY question on law needs to include your general locale as laws vary by area.

At the time, I merely skimmed the paperwork. Yes, I understand, BAD idea.
My mother went online and found a site that you can print out custody transference papers.
I never went to court on this matter, there was never a court date assigned for the case.
I signed because, at the time, it was best for my daughter because I didn't have the means to take care of a baby.
The father hasn't been a part of anything, he chooses not to be involved in my daughters life.

If all you did was sign papers and a court did not ratify the transfer, then it hardly exists. You could go tomorrow and pick up your child and there will be little your mother can do about it.
She would have to go to court and show your intent by showing the signed document, but you can recant it.
