My ex girlfriend got pregnant, didn't tell me until she was 6 months pregnant, did an over the counter paternity test, the baby is mine, she is now demanding money, I am not even on the birth certificate, she didn't let me have anything to do with the pregnancy or birth all she wants is money, I don't want to pay her until the court orders me to only because I feel entrapped by the whole thing, I want to step up and take care of my son, but she is being difficult and only sees me as a paycheck, since I am not even listed on the birth certificate should I wait until she serves me with papers? What is the max. child support?

What the max support is depends on your location, an important fact you left out.
Whether you wait is your choice. You do not legally owe support until a court orders it.
However, if you want to be a part of your child's life then you might want to be proactive instead reactive. File for paternity so you get named the legal father. File for joint legal custody and visitation. She will probably counter file for child support.

Glad you want to "MAN UP" since a man does not wait, he will go to court and ask for a DNA test to prove the child is his, he will then ask for visitation with his child and be part of the child's life ( not the mothers, but the child's life)
You will pay support based on your income and state law ( in the US)

State is Illinois, we did the paternity test, over the counter and sent off to a lab, not court legal but made me feel better knowing he is mine, won't fight support because I would prefer honestly to raise him myself but now that it is confirmed that he is mine she is nothing but money money money and very stringent on time allowed to see him... can I make her put my name on the birth certificate? She wants my money but won't give my son his birth rite...

I already answered this. If you are the bio father than you have rights. But you need to go to court to enforce them. Once a court acknowledges you as the legal father you can have your name put on the birth certificate. You can force her to give you visitation. On the other hand she can enforce support.
If she is being using the child as a pawn the courts won't allow it.
