The other night I turned on the head lights of my 2007 Ford Fiesta Zetc and the blue high-beams light appeared on the dash.

I thought I was imagining things so I drove off and was promptly flashed by various cars traveling in the opposite direction.

I think I'm doing it right (I have had the car for a year so I should be doing it right). I turn the light knob/switch all the way to the right and make sure it is pushed right in.

I thought to get the high beams I turn the switch all the way to the right and pull it out?

No matter what combination of turning, or pushing and pulling I try, I can't get the normals headlights to switch on (only the fog lights or high beams).

Any ideas?

Did you pull your blinker switch towards you?? They not only push down and push up to blink the blinkers but if u push the sick forward and backwards it turns on your brights.
